The Shelby has over twice the power of the other two cars and will have no problem facing the Honda and the Chevy. The Chevy and the Honda are pretty close. The Honda has got around 30 more HP, but and if it has a manual transmission will perform better than an auto, so theoretically the Honda will beat the Chevy. But depending on who jumps off the line first and driver experience it can change.

Hey would you mind answering one more question about cars

On a big track with wide sweeping turns, like NASCAR you would be fine, just slow down a little for the turns and get back on it on the straight away.
But for a precision track, vented disc brakes front and back, double piston calipers, stouter springs and shocks with some anti-roll bars to keep you level in the corners, some lower profile tires with good tread.
That's getting into some money but with that stuff you should be good to go.
But then again, I'm not an expert on chargers, so they may already have some of this stuff. When you get the car and get ready to get the stuff, perform some in-depth research on what you will need to get to make the car handle great in the turns.
