Yes, if it didn't rotate there wouldn't be gravity or a day/night cycle.

The stronger gravity of Polyphemus would mean deeper oceans, as people have mentioned. The other moons wouldn't have much of an effect in comparison.

Humm... sorry there have a little mistake, a lot of people think that, but rotation of a planet don't make the gravity, the gravity is directly linked with the mass and the diameter of object, like that F = G(mo/d) where G = universal gravity constant = 6,6742×10E-11, mo = mass of the object and d= the diameter of the object.

Edit: F = the gravity acceleration, like here on Earth 9.81 N
